A simple, but tasty dessert. These fruit skewers are full of flavor thanks to a honey-lime glaze. These can be cooked on a grill pan or on your grill outside. Either way, that glaze will caramelize nicely around the fruit. I was a little apprehensive about the grilled watermelon and cantaloupe, but it was delicious! I think strawberries would be nice on these skewers as well. This is a great dish to bring to a party because it’s a healthy option, but tastes good! Try a little something different than that pan of brownies.
Grilled Fruit Skewers with Honey-Lime Glaze
adapted from Matt Armendariz’s cookbook, On a Stick!, serves 8
- 1/2 cup sugar
- 1/4 cup honey
- 1 cup fresh mint, minced
- 2 T lime zest
- 1 small pineapple, peeled, cored, and cut into 1-inch chunks
- 1/2 small seedless watermelon, peeled and cut into 1-inch chunks
- 1/2 small cantaloupe, peeled, seeded, and cut into 1-inch chunks
- coarse salt
Make the syrup: bring the sugar, honey and 1/2 cup water to a boil in a small saucepan, stirring occassionaly until sugar dissolves. Meanwhile, soak skewers in cold water for 30 minutes.
Remove syrup from heat and let it cool slightly. Stir in mint and lime zest.
Heat grill or grill pan to medium-high. Thread fruit onto skewers and sprinkle with coarse salt. Grill skewers 3 to 4 minutes per side. Brush with syrup on both sides and grill for an additional minute. Drizzle with more syrup and serve.
