Make these. Seriously. I have made three batches now, and I’m contemplating a fourth. The Husband is eating them faster than I can give them away! I think my holiday baking is done with though, except for a few loaves of bread that I’m going to make on Christmas Eve to bring to our families’ homes.
This year I tried a few new recipes, but also kept a couple of tried and true ones like my favorite ginger cookies! Also in the mix this year were chocolate cookies with mint chips, Zimtsterne, traditional sugar cookies, peanut butter cups, toffee, and hot chocolate blocks. I’ve given away most of everything, but I still have a few goodie bags to drop off this week.
These cookies are a wonderful combination of flavors. I think you could probably use dark chocolate instead of white, but why toy with perfection? I found this recipe on Two Peas and their Pod‘s website. Maria has some great recommendations for holiday baking, I am looking forward to trying more of her recipes soon!
Oatmeal Cookies with Cranberries and White Chocolate
adapted from Two Peas and their Pod
½ c. brown sugar
1/2 c. white sugar
1/2 cup softened unsalted butter
1 egg
1 tsp. Vanilla
1/4 tsp. Salt
1/2 tsp. Baking powder
1/2 tsp. Baking soda
1 1/4 c. flour
1 c. oats
1 cup of dried cranberries
1 cup white chocolate chips or chopped white chocolate
Mix in eggs, and vanilla. Whisk together the flour, salt, baking powder, and baking soda. Set aside. In a mixer, beat butter and sugars until smooth. Mix in dry ingredients slowly. Add your oats, dried cranberries, and white chocolate.
Bake at 375 for 10-12 minutes. Make sure you don’t over-bake so they’re still a little soft!
